It has a complex aroma with notes of honey, tropical and citrus fruits. Wine 3 DescriptionThis wine is produced in Utiel from a single Pago de Vino plot, the Terrerazo, at 800 metres above sea level. Organic farming is used, grapes are manually selected and the different varieties are vinified separately. A cold maceration is followed by fermentation for 11 to 13 days. Malolactic fermentation takes place during 4 weeks in barrels followed by 10 months ageing in French oak.It has a cherry hue with hints of violet. It has an intense aroma with hints of red fruit, cherries/strawberries alongside black fruits/ blackberries with subtle spicy and mineral tones. On the palate it has a silky texture, fine tannins, fleshy dark fruit and hints of spice. A well balanced and integrated wine with a pleasant long finish.

Wine 4 Description  Another of our favourite wine producers, Manuel Martue is based close to Toledo. Started in 1990, the vineyard now produces over 20,000  litres pa. My favourite is the Syrah which pairs well with meats and, surprisingly, dark chocolate. Following fermentation and 20 days of maceration to extract fruit flavours and rich colour it is aged for 18 months in French and American oak barrels. The colour is cherry with hints of violet. The aroma is complex and intense with black fruits (cherry/blackberry ) foremost, also spices, pepper and lavender. It has an elegant, well balanced and complex flavour with the fruits, acidity and smooth tannins combining to very good effect. It has a long smooth finish. This wine is quite young and should continue to improve over the next 3 to 5 years.
